This is what we had for lunch today.  Never tried cooking it before, but glad the hubby liked the variation from the regular Adobong Pusit.  I found a handful of recipes online  but as usual, I did it my way. Instead of getting everything in the wok to boil, I sauteed the garlic and onion first, dropped in the squid rings and the chili before I poured in the vinegar, stock and coconut milk,  salt and pepper. Preparation was easy.  

I grabbed a hold of the cam before it was all gone. :D

Being a subscriber of The World’s Healthiest Foods, I am sent a bunch of recipes, week in and week out.  My desire is to get our family to love eat healthier foods.  The fact remains that crappy foods taste good though.

But then again, there is also this thing about acquiring tastes.  good friend that I had in college once told me that after a while of taking out meat out of his diet, he developed this aversion to it.   Ideally, you and your better half is a team in pursuing this goal.  Otherwise, it is going to be a struggle.  My point being:  If you are amongst who struggle, then it is best to introduce new dishes that are tastier than serving your family those notoriously known bland healthfoods.

I am looking into serving this recipe this coming week and enjoy the yummy side dish with all of the health benefits of phytonutrients from the veggies combined with the heart-healthy monounsaturated fats from the nuts. It’s a great side dish to accompany fish and poultry entres.

Prep and Cook Time: 10 minutes

Ingredients:

  • 1/2 cup chicken or vegetable broth
  • 1 cup each red and yellow bell peppers, sliced 1/2 inch thick
  • 1 cup onion, sliced 1/2 inch thick
  • 1 cup snow peas
  • 1/4 cup cashews
  • Dressing:
  • 3 TBS extra virgin olive oil
  • 2 tsp lemon juice
  • 2 cloves garlic
  • Sea salt and pepper to taste

Directions:

  1. Chop or press garlic, slice onions and let them sit for 5 minutes.
  2. Heat broth in a stainless steel skillet over medium heat.
  3. When broth is steaming, add bell peppers and onions, cover and sauté for 5 minutes.
  4. Add snow peas and sauté covered for 2 minutes.
  5. Transfer vegetable mixture to a serving bowl and toss with cashews and dressing ingredients.

Serves 2

5. Marshmallows and fire go together like the hubs and me.

6. When it’s about my little guy, I could go on and on.

7. And as for the weekend, tonight I’m looking forward to watching “Doubt”, tomorrow my plans include general cleaning with my weekend girl, maybe go with the hubs to his soccer game against Claret Alumni in the afternoon and Sunday, I want to go to church to worship and fellowship with our church family!

Lately, my wife and I have become quite busy and entertained by a social network site that is very interactive and connects us to many people whom we consider friends.

 

Just today, we bumped into a new social network that connects people in a unique and different way. It is actually more appropriate to describe it as a consumer network because of the way they connect the members in their network. I just realized that it has been a while since I last participated in ~ My Husband Rocks! ~ meme. Not that I have nothing to blog about the hubby. Fact is, he is so much more than I have ever given him credit for. Coming from a family of origin that being demonstrative is not exactly encouraged, it is not automatic for me to blurt words of appreciation in an instant. But I am getting better at it. For one, I have always believed we should not withhold anyone credit to whoever it is due.  I’m a constant work in progress.  Knowing that Words of Affirmation is the hubby’s primary love language, I ought to speak it better.

I am blessed to have Jeff.  He is more than everything I would have dreamed of.  Although, I don’t get to express this most of the time.  As with any marriage, I sure could look into holes and wish for a little of this and that or even look into how things could be better if (which I can really be good at if I don’t watch it).  But in all honesty,  with all our imperfections (his and mine), the Lord surely has made it ever so clear through our strengths and weaknesses, that it can only be He who has orchestrated this marriage.  We totally complement each other.

A few days back he was able to finally find the time to fix our bathtub faucet.  We have been putting up with the leak around the bathtub for more than a couple of weeks. Having a plumber turn down the job at first sight – the man has never worked on a bathtub faucet and swore it’s installation was complicated.  We then had to wait until the hubby is able to get down to it.  He was able to fix it in such short a time that it was almost regretful that we had to wait so long to get it fixed.

He has always been my all around guy.  With his focus and analytical mind, he is able to do a whole lot of things that would normally have to take a certified skilled worker to do.  Although I must say that he may not have the most outstanding memory.  He actually lost his wallet and Samsonite backpack in the last six months and forgets things every so often.  I would often wonder why, because he has never been anesthetized in his entire life.  By far, in all our seven years of marriage, he has not yet forgotten my birthday or our anniversaries.  That’s something for someone so forgetful.  All these being said, his good qualities definitely surpass his not so good ones.  :D

It was Thursday night last week, a couple of days prior to the flu awareness event when I told our son that he and mama are going to get their Flu shots come Saturday. He readily said okay. Then I had to make sure I got the message across, I told him with an assumptive tone that Kuya Jed is a brave boy and is not afraid of injections, right? Again, he said yes. I knew we were good to go.

The environment of the seminar venue was inviting, especially for kids who were welcomed to the AVR with a neat cartoon movie. I have to give it to Sanofi Pasteur Phils. for their vigilance in this campaign and for getting down to have people know how real the dangers of influenza are.

The medical director of  Sanofi Pasteur was the one who conducted the seminar. It was during the first minute of Dr. Ruby Mendoza-Dizon’s talk that she got my full attention. We are in the same boat, I share her sentiments. She only has one child and she would really go the distance to keep her child safe, especially against ailments and diseases. This is my reason as well why I have made sure my son is on schedule when it comes to his immunizations/Bakuna- right from birth. But truth be told, I have not gotten him this shot in his previous years. I thought since it was not part of the schedule in his baby book, I thought it was not that much of a deal. I was wrong.

I used to think that flu was just one of those days that you get to be under the weather and is gone before you know it. Aside from my personal experience of infecting my son with the flu a couple of months back, this seminar reinforced all my readings and widened my knowledge about influenza further. This contagious respiratory illness can actually be life threatening. It is said that in a tropical country such as ours, the incidence of flu is actually hiked up during the rainy months from June to August.

Practically everyone should get themselves immunized, especially those who are asthmatics, diabetics, children from 6months to 5 years old. 50 years old and above, health workers and those who are immunocompromised. But Dr. Dizon also emphasized that people who are allergic to eggs cannot take flu shots because of the plain fact that the vaccine is cultivated inside eggs. And if your body is not able to tolerate eggs, then understandably your body is most likely to have allergic reaction towards the shot. But for those who are not allergic to eggs or chicken then this vaccine will actually prove to be cheaper to spend for, than to get sick from the complications that influenza can bring you and your family. The timing of the invitation from Nuffnang Philippines was perfect. Our family is actually scheduled to get immunized against influenza or Trangkaso in our vernacular, this coming February as per the suggestion of my son’s pedia. The bonus was we did not just get educated with things that we need to learn about influenza but we were also given free flu shots by no less than the Vaxigrip brand. Amongst all other brands, studies show that this is by far the least that cause side effects.

After almost a year that our church is trying to look for a place to transfer to, we are actually considering to just stay where we are. This is because we really could not find a place that our church could afford that is big enough to hold our Sunday services. Obviously, we won’t have to call back the office of the moving trucks we have hired from before for their service. But more than that issue, we pray that the building owner will consider as we negotiate with them for a lower rent. I’m a little sad that we have to stay and put up with the stinky ground floor, especially during weekends. But then again, the Lord might have something better in store for SBC-Makati that we cannot see just yet from this point.

 

As Joshua 24:15 said it, we will press on…”..But as for me and my household, we will serve the LORD.”

T’was a very busy weekend for us, which explains the couple of days without posts. This update will be a quick one, I have to rush to the salon to accompany mama to have her brows fixed. What better way to do a quick update than a photo essay, right? :-)

Hopeful. This is what I feel towards this brand new year. Last year was not exactly a healthy one for me and the rest of my family. Fact is, I have been sickly for as long as I can remember. But it becomes a bigger issue when you have a child to take care of. As the primary caregiver of my son, I also have to take care of myself to keep him from being sick. There were a couple of times last year that I might as well hit myself on the head for taking my health for granted. My resistance went to its all time low and got me under the weather more than half of the whole 2008. An example of which was when I was hospitalized during the first trimester of last year, a couple of weeks before I took the board exam.

From my son’s infancy, I only prepared brown rice for him so that he will have the maximum nutrition from the most natural source, among other things that I do to make sure he is healthy. But the thing is, whatever effort I give towards taking good care of him, when I am not healthy myself, his susceptibility to getting sick is automatically taken to notches higher than usual. I have always known about flu shots from years ago, but never gotten down to having them. I knew I was not committed enough when my son’s pedia told us late last year that the shot is about to expire and it is best to have it on February of this year.

I took on the responsibility to do my own research on flu vaccine that led me to my resolve of getting all of us vaccinated, first quarter of this year. Things were later reinforced by friends and loved ones who vouched for the shot of getting them almost invincible to influenza. I need no further convincing. I should say that I am starting this year right – regular workouts and very soon I will be getting my family protected from the notorious, ever mutating influenza virus. I wasted a lot of hours in my sick bed in 2008 to leave my health issues to fate this year. I am indeed hopeful even as I reclaim my health by being intentionally vigilant through getting ourselves immunized and getting back in shape by doing regular workouts.

Even as we take these steps towards taking control over our family’s health, I am made more confident of a better quality of life in 2009.

After having read Twilight’s complete series and Midnight Sun last month,  I cannot help but get hooked on reading e-books via my cheap flip LG mobile.  I love books, always have.  I have tons at home courtesy of my Uncle from the states who chose us as recipients of what could be considered an inheritance.  Aside from the books that I have purchased through the years and a handful of others given as gifts.  Mama told me she did not wear glasses until she was 50.  I hope I get that good gene from her.  I think 50 would be acceptable age for me to wear one.  I am really not very comfy wearing spectacles.  I get sweaty around the nose a lot and glasses irritates my whole mid face region.  Weird, eh?

Two days ago, I called up my life insurance provider with the intention to have my account terminated for the reason that it was hooked to my credit card and I was set on canceling all my credit cards save for one, for emergency purposes. The first thing I did was check with them if there were other ways I could pay the premium aside from the automatic charge that they make via my credit card. They don’t.

To make the long story short, I was left with no other choice but keep this card that was hooked to my life insurance and that of my little guy. I know it can be very convenient, because I need not worry about forgetting to pay the monthly premium. But then again, it would have been better if they had other options for clients to pay for the premiums aside from what they solely offer.

After having paid of the hubby’s life insurance during the third year of our marriage, it was but prudent to get mine and then our son’s.

Yesterday was another no post day. I was out doing all sort of things. I went to see my doctor, then to PRC to finally get my license and to church for the briefing of  the registration team for the Women’s conference that will be held tomorrow at Teatro Marikina.

I am glad that yesterday was the last of the series of my having to see the doctor on a regular basis. Traffic in Ortigas is terrible. After almost a year of stalling, I finally was able to go to possibly the most crowded place in Manila to get my professional license. I know that I shouldn’t expect much from a third world government office like PRC, but I guess it is just something I won’t get used to. This was the reason why it took me so long to go and claim my license and board certificate.

Anyhoo, allow me to call on all ladies who will be available tomorrow for the RefresHer2 Women’s Conference, registration starts at 8 A.M. in Teatro Marikina. The conference will be from 8 A.M. until 4 P.M. Come and be blessed! :-)
