For an easy to prepare salad, which is both packed with Vitamin D and will provide you a hundred and five percent of your Daily Value for Omega 3 fatty acids, try out this Cucumber Chili Salad recipe. Another winner from The World’s Healthiest Foods. After having gained almost four pounds since last month, it looks like I am going to have to look into preparing more of salads, from now on.

Prep and Cook Time: 20 minutes
Ingredients:
1½ lb salmon fillet,deboned and skin removed cut into 4 pieces
3 cups thinly sliced washed cucumber, do not peel
2 tsp minced jalapeno pepper, seeds and stem removed (or to taste)
½ cup chopped scallion
3 TBS chopped fresh cilantro
1½ TBS chopped fresh mint
Dressing
2 + 1 TBS fresh lemon juice
1 TBS soy sauce
1 TBS extra virgin olive oil
salt and cracked black pepper to taste
Directions:
To Quick-Broil salmon preheat broiler on high and place an all stainless steel skillet (be sure the handle is also stainless steel) or cast iron pan under the heat for about 10 minutes to get it very hot. The pan should be 5 to 7 inches from the heat source.
Rub salmon with 2 tsp fresh lemon juice, salt and pepper. (You can Quick Broil with the skin on; it just takes a minute or two longer. The skin will peel right off after cooking.) While pan is heating, prepare the remaining five ingredients. Using a hot pad, pull pan away from heat and place salmon on hot pan, skin side down. Return to broiler.

Keep in mind that it is cooking rapidly on both sides so it will be done very quickly, usually in 7 minutes depending on thickness. Test with a fork for doneness. It will flake easily when it is cooked. Salmon is best when it is still pink inside. While salmon is cooking, whisk together lemon juice, soy sauce, olive oil, salt and pepper. When ready to serve toss with cucumber mixture. Do not toss ahead, as it will dilute the flavor. Place cucumber salad on a platter and place salmon on top. Garnish with a sprig of cilantro and serve. Serves 4

This morning, when I was window shopping for Kohler sinks online, mama called to inform me that my younger sister is scheduled to have her operation tomorrow at 7AM. I covet your prayers, dear readers, for my dear sister. The schedule was originally set for the 17th, but the pain that is caused by her adenomyoma has become too much to bear.
We found out that those nasty growths have leaked, from her doc’s visit yesterday. Pain medications refuse to work since last week.
May the Lord guide the doctor throughout the procedure and my sister’s body to respond well to the medications during the operation.
It is actually her birthday today and it looks like she will be spending her birthday confined in the hospital. We are hopeful things will turn out well. Happy birthday still, dear sis! We love you and we’re with you, praying.

SM Marikina invited 200 bloggers to test their mallwide WiFi coverage last February 28, 2009. The first thing I noticed was they changed the name of their connection to SM Marikina Free Wifi from its former Happy something name. As a frequent visitor of SM Marikina, I have always enjoyed the free wifi coverage across the stretch of the mall, except for those times I had to go to the innermost parts of the department store. The second thing that I noticed was at around 2 PM, the connection was ultra fast.

After having made the big switch and now that we are two months in, we are definitely satisfied with the service of our current internet provider. There really is no reason to be stuck if there’s an alternative that will provide better service. Except that in the previous years there was really no other option for us from the internet offers and we refused to go back to a dial up connection.

The hubby and I finally got to have our most coveted V date just before the love month ended. Both our schedules are almost always full and aside from the fact that there were lots programs in church during the V event, it is not always the wisest to bump other lovers everywhere. The traffic isn’t just at its worse but it is just not the most comfortable spending time and get mushy in full packed resto.

The date started as we were done with the registration for last Saturday’s bloggers event. Did some retail therapy date for starters, checked out Oakley watches while we did the Wifi testing via my mobile. After the WiFi event, we proceeded to The International Jazz Festival in Eastwood, which we really enjoyed. The 300pc. Black Gospel Choir had such a crowd and blessed our hearts. We also loved the music of Logic from Australia.
Such a fun time to get away and do the things that we enjoy doing. Happy that my folks took care of our little one the whole time.
